Put the soup bowl in a fridge to chill
Add ground meat or tofu in a frying pan. Start frying with a lower heat until fully cooked. If you are only using ground chicken and tofu, please add 1 tbsp of oil. Oil for ground pork is not needed.
In a small bowl, add sake, sugar, miso, and soy sauce. Mix all well.
Add the seasonings mixture above into frying pan over meat, be careful seasoning will splash by adding to a hot pan to avoid this, please stop the heat. Mix well keep cooking until all seasonings are cooked and dried.
In a bowl, add cooked udon
Pour chilled soup about 60% cover the noodle
Garnish all the topping
Suggestion: for winter, please heat the soup
