CLASS & EXPERIENCE

FROM MARKET TO MEAL

Gather ingredients at a Japanese market and then use them to prepare lunch!

4 Hour Experience  |  10:00 AM – 2:00 PM   |   ¥9,000 Per Person

We come to my favorite and one of the popular supermarkets for locals. I show you fresh local produces and explain Japanese basic seasonings and ingredients, like soy sauce, miso, kelp, and dried bonito. We pick up ingredients we need for our cooking class. From this market visit, I’d like you to know what Japanese eat in our everyday life. After shopping, we take a train to move to my cooking studio. We walk through University of Tokyo campus and see a quiet area of Shibuya. In cooking class, we learn fundamental Japanese cooking techniques; dashi stock making, cooking rice in clay pot, Japanese salad dressing, and fish main dish,and dessert. We taste varieties of Japanese seasonings and ingredients. This is the fundamental Japanese cooking experience. Let’s learn how “umami” is created!

COOKING CLASS

SUSHI AT HOME

Learn how to make delicious sushi rice and create your own nigiri, tamago, negitoro and rolls!

3 Hour Class  |  10:30 AM – 1:30 PM   |   ¥8,500 Per Person

Sushi making is one the amazing hand-work creative dishes in Japanese cuisine. Just because you are in Japan, it is time to experience fresh and many kinds of sashimi, raw fish by learning how to handle it and tasting it. In this class, we first will learn how to make delicious sushi rice, and make our own sushi plate, nigiri, inside-out rolls, and tamago. We will practice tamago making in this class using Japanese tamago square pan! We discuss about other Japanese cooking tools, such as Japanese knives. And tasting experience is always included in all the class. Miso to other Japanese seasonings you taste to learn what good quality seasonings taste like. After taking this class, you will be confident and enjoying throwing a Japanese sushi party at your home!

WAGYU, JAPANESE MARBLE BEEF COOKING

In this Japanese wagyu cooking class you’ll discover new tastes, learn about Japanese cooking tools, and how to present Japanese cuisine!

3 Hour Class  |  11:00 AM – 2:00 PM   |   ¥8,500 Per Person

Wagyu, Japanese marble beef is very special ingredients in Japanese cuisine. We have a licensed inspector of it and grades. We will be learning kinds of beef what they feed and how the meat becomes so marble.  In this class, we will be learning one of best way to eat wagyu! And learn about Japanese cooking tools, and how to present Japanese dish!

VEGETARIAN RAMEN & GYOZA

Discover a unique combination of ingredients to create a truly satisfying vegetarian ramen! 

3 Hour Class  |  10:30 AM – 1:30 PM   |   ¥8,500 Per Person

Everyone loves Ramen and Gyoza! But the soup stock is usually meat base. But, in this class, we will learn creating delicious and truly satisfying vegetarian ramen! Unique combination of different types of ingredients for creating an unbelievable vegetarian ramen! And, lets learn how to form gyoza making, and secret of steam and grilling technique for making crispy outside and soft inside gyoza. And lets try with three different kinds of sauce with it!

If you already have a good understanding of basic Japanese seasonings and ingredients, this class will take you to the next step and allow you to explore another level of Japanese flavors. In this seasonal Kaiseki cooking class you’ll discover new tastes, learn about Japanese cooking tools, and how to present Japanese cuisine!

The Market To Meal Experience is our most popular class! It offers a trip to a Japanese supermarket near Shimo-Kitazawa where you learn about ingredients as we shop for the cooking class. After shopping, we go to Tokyo Cooking Studio and begin cooking lunch. We will then enjoy lunch and a fruity sake.

Menu:

  • Marinated raw fish rice bowl; tuna, squid, scallop and salmon
  • Octopus salad with avocado yuzu vinaigrette
  • Clam miso soup
  • Sweet tamagoyaki, Japanese omelet

I always ask my guests what their favorite Japanese dishes are in my class. And lots of them answered “Japanese Curry”! And as I think about the ordinary Japanese curry, it uses pre-made curry paste cubes with lots of additives. That is not my favorite thing to cook with, so I came up this recipe that I learned many years ago and have been cooking for my family for years.  Fresh apple, celery, and honey create a delicious sweetness with the spices. To make it special, we will fry tonkatsu, everyone’s favorite pork cutlet as a topping! Taste the big flavor from this dish and bring the recipe and skills back with you after the class to recreate this at home!

  • The core ingredients of basic Japanese curry
  • How to bring out the flavors from all of the ingredients
  • The procedure to make breading using flour, egg and breadcrumbs
  • How to deep fry
