One of my favorite Japanese meals is absolutely the Japanese tapas food! Izakaya is the place where we can taste the most creative homey food with drinks. It includes, varieties of deep fried dishes, sashimi, salad, tofu dishes, dips, braised meat and much more. Itazaka is the place where I get my food inspiration, each places makes very different creative dishes, they can be for small dishes with drinks and and some main dishes can be home cooking lunch or dinner. This class is the one you can learn all of them. It covers lots of good Japanese cooking techniques such as braised, deep fry, raw food, and knife skills.

CLASS & EXPERIENCE

FROM MARKET TO MEAL

Gather ingredients at a Japanese market and then use them to prepare lunch!

We come to my favorite and one of the popular supermarkets for locals. I show you fresh local produces and explain Japanese basic seasonings and ingredients, like soy sauce, miso, kelp, and dried bonito. We pick up ingredients we need for our cooking class. From this market visit, I’d like you to know what Japanese eat in our everyday life. After shopping, we take a train to move to my cooking studio. We walk through University of Tokyo campus and see a quiet area of Shibuya. In cooking class, we learn fundamental Japanese cooking techniques; dashi stock making, cooking rice in clay pot, Japanese salad dressing, and fish main dish,and dessert. We taste varieties of Japanese seasonings and ingredients. This is the fundamental Japanese cooking experience. Let’s learn how “umami” is created!

COOKING CLASS

SUSHI AT HOME

Learn how to make delicious sushi rice and create your own nigiri, tamago, negitoro and rolls!

Sushi making is one the amazing hand-work creative dishes in Japanese cuisine. Just because you are in Japan, it is time to experience fresh and many kinds of sashimi, raw fish by learning how to handle it and tasting it. In this class, we first will learn how to make delicious sushi rice, and make our own sushi plate, nigiri, inside-out rolls, and tamago. We will practice tamago making in this class using Japanese tamago square pan! We discuss about other Japanese cooking tools, such as Japanese knives. And tasting experience is always included in all the class. Miso to other Japanese seasonings you taste to learn what good quality seasonings taste like. After taking this class, you will be confident and enjoying throwing a Japanese sushi party at your home!

The Market To Meal Experience is our most popular class! It offers a trip to a Japanese supermarket near Shimo-Kitazawa where you learn about ingredients as we shop for the cooking class. After shopping, we go to Tokyo Cooking Studio and begin cooking lunch. We will then enjoy lunch and a fruity sake.

I always ask my guests what their favorite Japanese dishes are in my class. And lots of them answered “Japanese Curry”! And as I think about the ordinary Japanese curry, it uses pre-made curry paste cubes with lots of additives. That is not my favorite thing to cook with, so I came up this recipe that I learned many years ago and have been cooking for my family for years.  Fresh apple, celery, and honey create a delicious sweetness with the spices. To make it special, we will fry tonkatsu, everyone’s favorite pork cutlet as a topping! Taste the big flavor from this dish and bring the recipe and skills back with you after the class to recreate this at home!

2. Market visit

Delicious sushi is not fresh sashimi, the secret is amazing sushi rice. In this class, we’ll learn how to combine freshly cooked rice and sushi vinegar. Learn how to make “authentic” sushi, lots of eye opening experiences! Weekly and weekend three hours class.

8. Ramen and Gyoza

Learning about ramen soup, how to make beautiful ramen stock. And flavoring formula for ramen.
We’ll making noodle from scratch. Weekly and weekend three hours class.

9. Japanese sweets

Making bean paste, dorayaki, dango, daifuku.

10. International cooking classes

Greek, Italian, and Thai cooking classes.

From 3 to 6, all include main dishes, two other sides, and soup and rice, and these classes might be private or with other professional course participants. From 7 to 10 classes, the classes are with other participants, some of them are from the same professional course or some from regular class. After a registration of this course, please pick dates for each class.

The course includes:

  • TCS aprons is included
  • A TCS teacher certificate will be issued after completing the course, and receiving the certificate that eligible to become an instructor of TCS when position is available.
