Ramen is absolutely my guests’ favorite Japanese dish. And, it is a unique dish that Japanese locals usually never make at home, but with the current “Stay Home” situation it is a different story. I am sure the most missed Japanese dish is ramen, so lets make it at home!

I created vegan and vegetarian ramen recipes during the early days of opening my cooking studio. Ramen in general is a very animally, fatty dish, and I started thinking about how vegans and vegetarians must be craving ramen too, so I created this ramen just for that reason.

If I choose one dish to eat on my last day, I absolutely choose gyoza! And, definitely Japanese-style super crispy, thin skin, pan fried gyoza. I have created and tested different kinds of filling recipes with slightly different seasonings and this is the best.

Japanese desserts are quite unique. Small delicate soft chewy mochi dough and sweet fillings are typical, and many are fat free and gluten free. There are many good techniques you can learn from this online class.

Gather ingredients at a Japanese market and then use them to prepare lunch!

We come to my favorite and one of the popular supermarkets for locals. I show you fresh local produces and explain Japanese basic seasonings and ingredients, like soy sauce, miso, kelp, and dried bonito. We pick up ingredients we need for our cooking class. From this market visit, I’d like you to know what Japanese eat in our everyday life. After shopping, we take a train to move to my cooking studio. We walk through University of Tokyo campus and see a quiet area of Shibuya. In cooking class, we learn fundamental Japanese cooking techniques; dashi stock making, cooking rice in clay pot, Japanese salad dressing, and fish main dish,and dessert. We taste varieties of Japanese seasonings and ingredients. This is the fundamental Japanese cooking experience. Let’s learn how “umami” is created!

Everyone loves Ramen and Gyoza! But the soup stock is usually meat base. But, in this class, we will learn creating delicious and truly satisfying vegetarian ramen! Unique combination of different types of ingredients for creating an unbelievable vegetarian ramen! And, lets learn how to form gyoza making, and secret of steam and grilling technique for making crispy outside and soft inside gyoza. And lets try with three different kinds of sauce with it!
