By The End Of This Culinary Experience, You Will:

  • Have a wide understanding of Japanese fresh produce, wagyu (Japanese beef), fish and seasonings
  • Discover what Japanese eat everyday at home
  • Learn how to find fresh fish and work on raw fish
  • Learn new Japanese cooking tools
  • Learn how to cook rice using an earthenware pot
  • Taste and learn about three kinds of Japanese miso and soy sauce
  • Learn how to work with glutinous rice flour

I’m excited to take my guests to one of representative “Shibuya style” supermarkets. I show you and explain seasonal produces, Japanese seasonings, and pantry items in Japanese kitchen. From this part of experience, I’d like my guests to discover what Japanese eat everyday, and the fundamental ingredients of Japanese cuisine. And more, I hope that from this experience of visiting a market with me is a chance to see how Japanese food market is presenting products, how local shop, and “food culture” behind the products. After visiting the market, we move to my cooking studio by taking a train two stops from Shibuya or walk depending on weather.In my cooking class, we cook a Japanese homey creative dishes. We will learn making dashi, Japanese broth, Japanese dressings, soup, rice, and dessert.This class is all about learning and tasting Japanese fundamental ingredients, how to use them, and discover how umami is created. My menu is seasonal creative dishes, food should be seasonal so I update my menu by season. This class menu is not created vegetarian, but can be accommodated. But smoked bonito is used in broth.

Class Menu:

  • Oyakodon, braised chicken and onion cooked in dashi and soy sauce mixture. Serve over donabe cooked rice
  • Clam soup with tomato and egg
  • Fried lotus sandwiches with shrimp, shiitake, and shiso leaves filing. Serve it with fried shishito pepper and sansyo pepper
  • Seasonal salad with sesame and fresh wasabi dressing
  • Fruity Daifuku, stuffed with fruit and Anko paste
  • Homemade seasonal pickles
  • Yuzu sake
