
Super easy 30 minutes Summer noodle dish
- 1 tbsp sesame oil
- 1/2 tsp soy sauce
- 2 tbsp sesame paste (tahini)
- 50 ml water
- 100 ml unflavored and unsweetened soy milk
- 1 tsp chili oil
- 150 grams ground meat (used pork, chicken, or tofu) for using tofu, please drain water by putting a weight at least 30 mins
- 1 tbsp sake
- 1 tbsp sugar
- 2 tbsp miso darker color is suitable miso if not please use what ever you have
- 1 tsp soy sauce
- 1 serving udon, ramen noodle, or so-men Please precooked by following the package
- 1 small tomato chopped small dice
- 1 stem spring onion chopped
- 3 okura cooked chopped round slice
- 1 stem coriander chopped
add sesame, soy sauce, tahini, water, soy milk, chili oil in a bowl. Combine well using a whisk
Put the soup bowl in a fridge to chill
Add ground meat or tofu in a frying pan. Start frying with a lower heat until fully cooked. If you are only using ground chicken and tofu, please add 1 tbsp of oil. Oil for ground pork is not needed.
In a small bowl, add sake, sugar, miso, and soy sauce. Mix all well.
Add the seasonings mixture above into frying pan over meat, be careful seasoning will splash by adding to a hot pan to avoid this, please stop the heat. Mix well keep cooking until all seasonings are cooked and dried.
In a bowl, add cooked udon
Pour chilled soup about 60% cover the noodle
Garnish all the topping
Suggestion: for winter, please heat the soup
